Cradle of the Great Salt spaces since Roman times, this is where the masters of the Camargue Sauniers themselves at the service of the development of sea salt and especially the "Fleur de Sel de Camargue", their ancestral knowledge.

In the Camargue, the ramparts of Aigues-Mortes, the mountains of sea salt attest to a farming environment-friendly, flora and fauna of the Mediterranean. Harvested once a year (late August / September), "La Baleine" sea salt is naturally white.

Nesting site of thousands of migratory birds, the Salin d'Aigues-Mortes is a sanctuary for those frequent travelers. The diversity of salinity and low human use provide them with abundant food and a peaceful environment for a stopover or for nesting before resuming their long migratory races.
