Photographer's Note

Travelling in Iraq:
I come back to TE with some pictures from Iraq. The war is over, people settle in a new Iraq. I had to join a tourist tour to get in and see things without prejudice. I was on a Religious tourism group visa.

I begin with Masghouf, a special and expensive meal found in retaurants along the Tigris.
The European Carp is slit open and set to the fire with he help of wooden sticks, far enough from the heat to melt the fat but not burn the meat. Fat drips down into the cinders and with it the moorish taste associated with Carp. You get the whole fish on a plate and eat with your fingers, it's delicious !
Interestingly, the European Carp was only introduced in 1955 in Iraq. The rivers hold many species of Cyprinid fishes, some giant Barbels called by US soldiers "Saddam's bass", Sheatfishes (=Silurids) and even an occasional coastal shark.
