Ankara'nin meshur Uludag kebapcisinda yedigim filetolu Iskender kebabinin karnima indemeden onceki hali.


Iskender kebap, in my opinion, is the most delicious kebap you can eat. Its construct is thinly sliced pieces of meat (usually beef/sometimes lamb) layered on top of a bed of pide bread. Yogurt is served alongside with the meat (visible in the right side). However, what differentiates Iskender from doner is the tomato sauce with freshly melted butter served on top of meat. As a ceremonial process, the team of waiters who serve your table bring along a man, that carries a pan full of hot melted butter, who is responsible for pouring the butter on your plate at the tableside. Also, in this photo, you can see smaller pieces of meat on top of the Iskender. Those are sliced filets of beef that you can get on top of your kebap if you order the Iskender w/filet special.
