Fast food in Chinese way.All the edible parts of poultry, cattle and lamb are readily chopped and baked here, while people make a queue along window to receive their order. No part of poultry is wasted, for even the tarsus is peels & eaten (nails cut). I suppose it should be crispy & brittle, because of its cartilage-like fabric. You'll have such a variety there.
